JAPAN, Kobe. At the end of August, the 68th edition of the International Congress of Meat Science and Technology (ICoMST) was held in Kobe, Japan. Although the congress could not be held as an in-person event due to Covid restrictions, all sessions were accessible via an online stream.
More than 300 participants, including distinguished speakers, sponsors and “Meat Science Award” judges from 27 nations, participated during the four days, and 205 posters were entered on meat science and meat-related topics. Most entries were dedicated to research on meat quality or specific products, with 56 and 33 entries.
