It is the responsibility of the meat producer to determine the use-by date. The Danish Meat Research Institute (DMRI) has developed a tool that can help to determine shelf life of fresh meat products.
The software-tools is named DMRIPredict and can be accessed free of charge from the website http://DMRIpredict.dk.
Here a user will find several shelf life models - pork, beef and chicken. Each shelf life model is based on the three factors significant for shelf life: temperature, packaging method and bacterial count at the time of packaging.
The vast amount of data, which is the foundation of the models, have been collected from around 50 individual storage experiments during the last eight years. The cornerstone of the development was to ensure models that are robust and reflect real life.
